Each month opens with the cash it has, spends from that pool, and closes with a reconciliation that has to balance before the next one starts.
Transactions are recorded as the institution posted them, never edited. You categorise after the fact, and most of that is done for you with anything uncertain waiting in a review queue.
Savings funds are envelopes over actual balances, so a vacation fund or a tax fund is cash that has been set aside, not a number on a plan.
